Mug Muffins

A quick and yummy sweet treat just for you

This is the perfect recipe if you are in need of a cake but don’t have the time to make it. Mug muffins are perfect for breakfast, dessert or a snack on the run. They are also incredibly quick and simple to make so give them a go!

Once you get the hang of this recipe you can add whatever fruit (or veggies) you have on hand. Mug muffins are quick and warm breakfast alternative, they make great additions to school lunch boxes, or whip one up after dinner and serve with yoghurt. It’s a great way to get additional fruit into your diet. 

 

I discovered mug muffins about 12 years ago when I was often at home alone during the evening. I didn’t want to make a standard cake because most of it would have gone to waste but I did WANT cake. A quick internet search (well ok, not so quick back then) revealed mug muffins. I have played around with the recipe several times and what I present below are the current favourites in our house.  These are so easy to make that Miss 11 likes them as after school treats. Even Mr 14 has given them a go but he prefers ready made food like apples or pears.

 

I’ve added two recipes below so you can get an idea of different ingredients. Think of them as mini cakes rather than mini muffins, there’s no egg but the milk is essential. Butter can be swapped for oil if you want a healthier option. 

One last tip: Different microwaves have different power ratings so times might need to be adjusted for your microwave. This recipe assumes you have a 1000 kw microwave. You may need a few seconds more or less, depending on the power of your microwave.

Apple Cinnamon Mug Muffin

In a large teacup (or mug) add

  • ½ apple – diced
  • ½ tsp cinnamon
  • ½ tsp brown sugar

 

Mix ingredients together and microwave for 30 seconds.

 

Add…

  • 1 Tbsp melted butter
  • 2 Tbsp milk
  • ¼ tsp vanilla essence
  • 1 Tbsp brown sugar

 

Mix ingredients together then add

  • 3 Tbsp flour
  • ¼ tsp baking powder

 

Mix ingredients together and microwave for 60 seconds.

Banana & Raisin Mug Muffin

In a large teacup (or mug) add

  • ½ ripe banana – mashed
  • 1 Tbsp milk
  • ½ Tbsp oil
  • ½ Tbsp honey

 

Mix ingredients together then add

  • 3 Tbsp wholemeal flour
  • ¼ tsp baking soda
  • ¼ tsp cinnamon
  • pinch of salt

 

Mix ingredients together then add

  • 1 Tbsp raisins 

 

Mix ingredients together and microwave for 45 seconds.
